Green, crisp, tasty, roasted asparagus. Oh Spring how I love thee.
I think Spring may finally be ready to hang out and visit for a while here in northeast Ohio. I say that because yesterday it was flipping freezing and snowing here.Today there is a bright round sphere in the sky that is actually causing some warmth!!
If I remember correctly, I think it’s called the “sun”.
You would think after living here on the shores of Lake Erie my entire life I would get used to the finicky weather. It totally validates the “if you don’t like Northeast Ohio weather, wait 5 minutes” saying. Nope. Yet..with the sun shining today, talks of temps in the low 70’s tomorrow, Easter celebration planning, I will allow myself to believe that we have finally made it out of the cold!!
Holy ish it’s about time.
With Spring also comes plentiful piles of brightly colored fresh fruits and veggies to your local grocery store and FINALLY at prices that wont hurt your wallet! Case in point, this asparagus. We absolutely LOVE asparagus in my house! I am not kidding when I say that there was genuine excitement to see these green bundles of joy popping up all over!
Even if you have picky eaters in your house, you NEED to give this super simple Garlic Lemon Roasted Asparagus a try. I don’t know what it is about roasting a vegetable that makes it that much more delicious, but believe me, that crap works. With very little hands on time, this super basic recipe is a great addition to your Spring dinner table or Easter celebration. Trust me, it will have all of your guests digging the funny looking spring veg.
Heat your oven to 425 degrees. First, prepare your asparagus for seasoning. Give them a wash and then grab them a few at a time with one hand on the very bottom of the stem and one towards the middle. Next, gently start to bend the asparagus. The ends will snap off at the point where they may be tougher than you would like for eating. RESERVE THOSE STEMS that broke off!! There are yummy things you can do with those! Drizzle some olive oil onto a cookie sheet/baking sheet. Add your prepped asparagus to the baking sheet. No need to worry about all of it being in an even layer. This is about ease, simplicity, and honestly…it won’t even matter. Drizzle some more olive oil over the asparagus and give your pan a little shake to coat the asparagus. Sprinkle on some sea salt (3-4 pinches) and garlic powder(1-2 tsp) and toss the asparagus around to coat. Season with some cracked black pepper and toss around or give that pan a shake again.
Place pan in the lower half of your oven to roast. Every couple of minutes, give the pan a quick shake to roll the spears around or toss them with some tongs. Cooking time can vary on the thickness of the spears. For an average size piece you can count on about 10-15 minutes. Some of the mine were a little skinny, so they definitely took closer to the 10 minute mark. Those are the extra floppy ones in my pics 🙂 You only want them fork tender….mushy asparagus is a major bummer.
Remove from oven and squeeze the juice of one half to one whole lemon over the top of the asparagus. tossing the veg to coat. We even like to sprinkle some shredded Parmesan on at this point too!!
This recipe is a wonderful Spring time addition to any meal. There aren’t any measuring cups, bowls or knives to wash. The oven does all of the work for you. It’s perfect for the Easter table since it’s so EASILY adjustable for larger crowds. I literally don’t measure ish on this one. Perfect for a quick weeknight, and totally affordable right now, you MUST give this one a try!!!!
Simple Garlic Roasted Asparagus with Lemon
SUPER Simple Garlic Roasted Asparagus with Lemon is the perfect quick addition to any spring meal!!
- 2 lbs. Asparagus, washed and trimmed
- Sea Salt (3-4 pinches)
- Cracked Black Pepper
- Garlic Powder (1-2 tsp)
- One Lemon
- Parmesan (optional)
- Step 1 Heat oven to 425 degrees. Drizzle baking/cookie sheet with olive oil.
- Step 2 Wash asparagus and gently snap off touch ends by placing one hand on end of stem and one towards middle. Stem will snap where begins to get tough.
- Step 3 SAVE THOSE ENDS for another recipe! 🙂
- Step 4 Place asparagus on baking sheet and drizzle them with more olive oil. Shake pan or toss with tongs to coat.
- Step 5 Sprinkle with sea salt ( 3-4 pinches), garlic powder (1-2 tsps.) and black pepper. Toss to coat.
- Step 6 Place in lower part of oven and roast, shaking pan occasionally to cook evenly.
- Step 7 Roast about 10-15 minutes until fork tender.
- Step 8 Remove from oven and squeeze juice of 1/2 to 1 whole lemon over top. sprinkle with Parmesan if desired.
