Well….that was an unplanned hiatus.

Sometimes I feel like I can handle 100 things at once…and sometimes I feel ¬†like I can’t even pull off something simple like tying my own shoes. Ok, well maybe not exactly that…but pretty damn close.

That has been me these last 2 weeks. Between end of the school year stuff for the kiddos, birthdays, work, and being sick for what feels like forever, I kind of just want to hide under a rock for a day. I have been meaning to blog, yet, zilch. I have been meaning to do a lot of things but at this point just happy I was able to get out of bed.

Ever tire of the boring old steamed veggie sides dishes at your house? I mean sure those little steamable packs of veggies are convenient, especially on a weeknight. Who am I to complain about a time-saving method of getting veggies on the tables each night?! It’s just that so often convincing your kiddos to eat their vegetables is hard enough as it is, so why not change it up a bit for them? ESPECIALLY if it’s as easy as these Roasted Broccoli or Cauliflower!!

Hey all!! Happy Mother’s Day Weekend to all of you mom’s out there!! I mean, it should be a weekend event, right? Let’s think about this here. Is one day really enough? I say no. Let’s work on that holiday organizers/planners whoever you are. I can provide some reasoning if you need justification. No worries, I got you.

Every year I always have a hard time figuring out what to do for my own mom let alone come up with an answer when my own kiddos ask how I want to celebrate Mothers Day. With my own mom, there’s always this internal battle of what is a sufficient gift or gesture that basically says “thanks for giving me life, and sacrificing, and dedicating your time to raising me”. Are you celebrating Cinco de Mayo? I am!! Being a card holding addict of Mexican food, I certainly am. Plus…I mean, margaritas. Do you really think I am turning down a day of margaritas? Heck no.

My biggest problem when thinking about Cinco de Mayo is deciding what I want to eat. Quite honestly, I want to eat it all. Plus….it’s on a Friday…that leaves a whole weekend to recover from a food coma. Totally worth it. Sorry laundry and other adult-ish responsibilities. See ya next week.

Double Loaded Spinach Artichoke Dip

I love dips. I love dips….almost as much as Oprah loves bread. Maybe more so, now that I think of it. She was pretty subdued in her announcement of loving bread. I am more of a Tom Cruise jumping on Oprah’s couch excited for dip. I will find an excuse to make dip….all the dips. Game on? Let’s have dip. Good report card kiddo? Lets have some dips. Today ends in -day?? Dip. I have a problem.

One of my favorite dips is Spinach Artichoke Dip. It’s cheesy…it’s great with all the carbalicious goodies like tortilla chips, pita chips, and even just bread (there you go Oprah). There are some amazing recipes for it out there and this is definitely a take on many of them. I have loaded this recipe with more spinach, twice the artichokes, more cheese and the perfect mix of seasonings to put this dip at the top of my list!

Shrimp Scampi Linguine with Vegetables

Oh…Shrimp Scampi. I could eat seafood every day of my life. Literally…every day. I would not tire, I would not get bored. I could it eat it here, there, I could it everywhere. I could eat it on a boat, in a float…ok, maybe not that one Rhyme-y McGee.

Luckily the whole fam likes seafood as well, so I can get away with serving it fairly often. The kiddos fave is shrimp, so we love incorporating it wherever we can!
